Born in 1987, I graduated from the Tsuji Culinary Institute French School and then worked at 'Tateru Yoshino Shiba'. Later, I served as a chef in Singaporean and Asian cuisine restaurants. Before becoming independent, I was the chef at the organic vegetable restaurant 'WEARETHEFARM' in Ebisu.

After experiencing a diverse range of restaurants, including French and Asian, I encountered vegetables and became an independent vegetable chef. As a freelance chef, I mainly offer catering services, along with consulting for restaurants, developing recipes, and producing e-commerce sites.

Making vegetables deliciously enjoyable is my life's work. I provide dishes that surprise with the true nature of vegetables, utilizing the entire vegetable - its skin, seeds, natural flavors, and even its bitterness.

For parties of six or more, an additional assistant fee is charged: Assistant/10,000 yen per person (11,000 yen including tax).

Are you familiar with non-standard vegetables?

 

Non-standard vegetables are those that taste fine but are not sold through regular distribution channels due to reasons like blemishes, irregular shapes, etc., and are often discarded.

 

In fact, about 30% of the vegetables produced by Japanese farmers are thrown away. This time, we have created a course that features these overlooked vegetables as the stars. The menu consists of five chef's choice dishes. Since the vegetables available vary each time, we only offer a chef's choice menu.
