Sawada Toshimitsu
澤田 敏允 シェフ
Born on June 7, 1986,
I started my career as a sports instructor before transitioning to the culinary world at the age of 24.
I served as the head chef at the traditional Japanese restaurant "Shimanouchi Ichiyo" in Osaka.
Later, I continued my journey as a head chef at "Japanese Cuisine Shinohara" in Shiga Prefecture.
The restaurant relocated from Shiga to Tokyo's Ginza district, where the name was changed to "Ginza Shinohara," and I continued to work as the head chef.
In Osaka, at "Ajikichi," I played the role of mentor, guiding from the second-generation master to the third.
Currently, I am in the process of preparing for independence.
As the head chef at "Shokudo Tanoshi" in Kita-Shinchi, I am putting my culinary skills to good use.
I hold the spirit of "omotenashi" (hospitality) from the Japanese tea ceremony close to my heart, and I aim to incorporate the seasons, festivals, and culture of Japan into my cuisine.
I hope to provide you with an experience of hospitality that satisfies not only your stomach but also your heart.

息子夫婦の結婚祝いと、親戚が集まる機会に初めて使わせて頂きました。
グルメな祖父の要望もあり、懐石料理をオーダーしました。お値段も献立もこちらの要望に対応して下さり、また、サプライズメニューまで提供くださって、親戚一同大満足でした!!
また、澤田シェフの料理に対する情熱がどの料理にも表現されていて、繊細な盛り付けと味付けが伝わってきました。
また、機会があればリクエストしたいです。
