安部 大輝 シェフ

After graduating from Ecole Tsuji Tokyo, I moved to France at 19 to work at Restaurant L'Arbouvoir in France. Later, back in Tokyo, I trained in various genres of restaurants including bistros, gastronomy, catering, and multinational cuisine.

 

Currently, as a freelance chef, I am active mainly in the Tokyo area. My activities include teaching online cooking classes, menu development, training for visiting chefs, and creating platforms that connect producers and consumers.

 

With experience in bistros, gastronomy, catering companies, and multinational cuisine, I am versatile and can adapt to any culinary request!

 

I am committed to making people happy through food. With the concept of "local production for local consumption," I aim to use ingredients from Fukushima Prefecture in urban areas. By cooking with these ingredients, I connect producers (makers) and consumers (eaters), raising interest and awareness. Through this, I aspire to contribute to regional revitalization and continue bringing happiness to everyone.

All dishes in the course incorporate seasonal elements, so the menu changes with the seasons.

Spring: The course features flavors such as bitterness, with ingredients like wild spring vegetables, Spanish mackerel, white asparagus, etc.
