■At 15 years old, I worked at a fish market and began working in wholesale for restaurants and eateries.
■At 16 years old, I switched to a sushi restaurant, and after working at several establishments, I have continued in this profession to the present day.
■At 21 years old, I became an independent traveling sushi chef, primarily catering to business owners' residences, vacation homes, corporate offices, and inns.
■At 24 years old, I founded and served as the head chef at Sushi Karasu, a members-only sushi restaurant in Shinbashi.
■At 25 years old, I was involved in the production of Sushi Masa in Daikanyama.
■At 25 years old, I served as the head chef for an exclusive VIP clientele of 100 people in Minamiazabu.
