Kojima Masaaki

小嶋 正明 シェフ

Born in 1969.

Graduated from Osaka Abeno Tsuji Culinary School.

Began Italian cuisine training at "Ristorante Vinoccio."

 

Subsequently worked at "Acqua Pazza," "Aoyama Acqua Pazza," and others before embarking on a 3-year training period in Italy.

Returned to "Aoyama Acqua Pazza" upon coming back and served as the head chef.

In September 2001, the same restaurant was rebranded as "Cucina Toscana Cozima."

 

In autumn 2009, relocated to the lush surroundings of Tomisato, Chiba, and is now known for offering ingredient-focused Italian cuisine that makes the most of the bountiful local produce.

 

The chef has authored numerous books, including "Italian Seafood" from Shibata Shoten and "Soups" from Shibata Shoten, among others.
