After gaining experience through training in both domestic and international settings, the chef traveled to Italy to learn authentic regional cuisine. They spent two years training in Michelin-starred restaurants in Parma and Sicily. Upon returning to Japan, they worked as a head chef in various restaurants.

In December 2013, they opened "Italian Kappo Umi," a restaurant that combines the appearance of Japanese cuisine with the flavors of Italian cuisine. Popular dishes at the restaurant include espresso-cooked Tanba black beans and mackerel oshizushi finished with balsamic vinegar.

Stunning Italian 10,000 yen course meal

1st Dish: Starter - Mackerel marinated in balsamic vinegar, served with boiled mustard greens.

 

2nd Dish: Appetizer - Assorted appetizers in "Yasun" style; including espresso-cooked Tamba black beans and homemade karasumi (dried mullet roe).

 

3rd Dish: Fish Course - Seafood grilled with pistachio.

 

4th Dish: Chawanmushi - Italian-style steamed egg custard.

 

5th Dish: Meat Course - Roasted duck.

 

6th Dish: Rice Course - Risotto cooked in a clay pot.
